Skyclad. Skyclad is quite simply amazing. Their earlier stuff is thrashy (think Testament with a fiddler), and their newer stuff (post-1996) is a bit more folky, and incredible. They can honestly be enjoyed by anyone who likes music.

Sound & MIDI Software for GNU/Linux, an extensive list of sound applications for GNU/Linux.
Ardour, an awesome Digital Audio Workstation (DAW) app. It isn't quite Pro-Tools quality, but it is really quite awesome, especially considering how it is Free Software and all.
GNU/Linux Audio Mechanics A very nice audio editor (I am/was porting it to work with Guile 1.6). The project has stalled development nowadays.

GNU Guile Scheme Grab the latest version from CVS. It is quite nice.
