Koftah-Adana Hybrid Kebabs
Ingredients
- 1 cup white onion (diced)
- 7 cloves garlic (chopped)
- 1 1/4 cup red pepper (diced)
- 2 tbsp fresh flat parsley (chopped)
- 2 tbsp crushed red pepper
- 2 tsp ground cumin
- 1 tbsp sumac
- 1 tsp koshering salt
- 1 tbsp fresh rosemary leaves (chopped)
- 1 1/2 lbs ground lamb
- 1/2 lbs ground beef (85% lean for binding)
- 2 tbsp white flour
Directions
- Mix everything together well and refrigerate for at least one hour
- Form into whateveer
- Grill for a few minutes per side or broil for ~7 minutes per side
