Simple Teriyaki Tofu

Work in Progress: this recipe isn't particularly great in its current form.

A very basic quick teriyaki tofu with steamed vegetables, rice, and mass manufactured teriyaki sauce in a bottle. I like to add some snow peas and baby corn when available.

While oven is preheating for the tofu, prepare the tofu and vegetables, aiming to get the rice cooking around the time the tofu goes into the oven, and the vegetables steaming around ten minutes after the tofu goes into the oven.

Tofu

  1. Lightly press tofu block
  2. Preheat oven to 400°F
  3. Mix 1 tbsp soy sauce, 1 tbsp sesame oil, 1 tbsp corn starch, ¼ tsp ground pepper in bowl
  4. Cut tofu into 1 inch by 1 inch cubes
  5. Toss tofu in sauce
  6. Place tofu in rows on parchment paper lined baking sheet
  7. Bake tofu for 30 minutes @ 400°F, flipping cubes after 15 minutes.

Vegetables

  1. Chop broccoli into florets
  2. Steam broccoli for six minutes

Rice

  1. Bring 2 ½ cups water and ¼ tsp fine grained sea salt to boil
  2. Add 2 cups long grained american white rice, cover, reduce heat to low and simmer for 25 minutes
  3. Remove from heat and fluff with fork

Bringing It together

  1. Chop green onions
  2. Heat skillet on medium heat with 2tbsp of sesame oil
  3. Add vegetables, green onions, and tofu to pan
  4. Add ⅓ cup teriyaki sauce to pan
  5. Coat vegetables and tofu in sauce, swirl around for 2-3 minutes, remove from heat
  6. Enjoy a plate with a bit of rice!
